Ashley Christensen, executive chef of Enoteca Vin, will finally open her Poole’s Diner on Wednesday Thursday. The long-awaited opening has come after Christensen had to essentially gut the kitchen and re-work the interior, making it less kitschy and more tasteful. Details to follow.
Edit: I just learned from Ashley that due to some permitting issues, they won’t be opening until Thursday.

No. I’ve tried to email Ashley a number of times, and she’s either mad at me or she’s so damn busy that she’s not taking the time to respond to anything but the most important correspondence.
She’s too busy answering all her fan mail after you posted that picture of her.
The menu at Poole’s will be posted on a blackboard each day. They’re trying to discover what are their favorite things, so look for a lot of different items early on. They’ll always have a meatloaf, for example, but they’re starting with venison meatloaf.
Today has been spent making stock, curing duck confit, and just getting ready for tomorrow’s opening. They couldn’t even get food into the place until yesterday, but all is moving quickly.
They’ll be open from 6 to midnight for dinner, Wednesday through Saturday. They’ll stay open late for drinks. They’ll also offer a Saturday brunch. Once the construction of the Convention Center is done, they’ll re-evaluate their hours, but for now, they just want to get it right with the crew they have.
I’m seriously considering heading over tomorrow for the opening. Why not???
