Crawford is their third chef. Phil Evans was the first. He's pretty talented, but may not have been the greatest manager. Paul Kellum came and quickly left. The food I ate coming from his kitchen was really not that good.

This is a super hotel with a great dining space, but it has lacked the top-level talent it deserves. I'm really crossing my fingers that Chef Crawford makes this a true dining destination.

How many chefs have they been through since the original? I had only gone once when they were still sorta new and am wondering where the former chef is now. I do hope though that Chef Crawford does well.

I'm glad to know Heron's has a new chef. We went for bunch on my birthday and weren't all that impressed; for the price and the branding of the hotel I was expecting much more. It wasn't awful, but like said based on their reputation I was expecting much more.

That said, I have a $175 gift certificate burning a hole in my pocket so I'll definitely go try out the new guy!

Thanks Varmint.

Varmint, do you know what month he left Woodlands Inn on '06? I'm just curious to know, because I went there in '06, and it was one of the more fabulous meals I ever had, and wonder if it was his menu or the next chef's?

i had the opportunity to meet with chef crawford a couple of months ago. great chops, very sharp fellow, and yes the ladies will love this guy. he will bring a much needed uplifting to heron's and the umstead and i hope to dine with him in the spring. i wish him the best... as i know some if not most of the challenges of being a new (forward thinking)chef in this market.
