Thats cool that she has her hands in a lot of the process. Breakin down the pig sounds like it could be a phrase that would catch on in the New Year.. at least in the food community. I have no idea what it would actually be used in place of though.

She cured and smoked it, using an heirloom breed of pig. She did not raise the pig, but I believe she broke it down herself.
google Bacon Jam . It is good stuff. I got some jars for stocking stuffers. It is very interesting. Wonder if she could make us some here in Raleigh.
